Additive Free Vanilla Ice-cream
- An electric mixer
- A 1-litre-capacity metal or plastic container
- 395 g can Sweetened Condensed Milk
- 600 ml cream
- 1 vanilla bean (split)
- Place condensed milk and cream in a large bowl. Using a knife, scrape vanilla seeds from bean and add to bowl.
- Using an electric mixer, beat mixture for 3 to 4 minutes or until mixture just forms soft peaks. Transfer to a 1-litre-capacity metal or plastic container. Cover surface with plastic wrap. Freeze overnight.
For a rich chocolate-chip ice-cream, add 1/4 cup Dutch-processed cocoa, sifted, to the bowl in step 1. Stir 1/2 cup mini choc chips into mixture after beating in step 2.
This is a recipe that my boys love and now make themselves. There is so much fun to be had with trying different additive free flavour combinations!
Be sure to use pure cream only (not thickened cream). Thickened cream contains additives.
