Healthy Chocolate Coconut Bites
- 1/2 cup coconut oil
- 1/2 cup cacao or cocoa powder
- 1/4 cup maple syrup or honey
- 1 cup coconut flakes unsweetened
- 1/4 cup quick rolled or quick cooking steel cut oats
- 1/2 tsp pure vanilla powder or seeds
- In a medium pot, melt coconut oil on low heat.
- Remove from heat and whisk in cacao powder and vanilla. Whisk in maple syrup or honey.
- Add coconut flakes and oats; stir until well combined.
- Place mixture in a freezer for about 10 minutes.
- Line flat sheet or platter with parchment paper. Using small scoop, form and roll golf size chocolate coconut balls placing on a platter.
- Freeze for 30 minutes. Enjoy chilled straight from the freezer or fridge.
These were super quick to make. I made it quicker again by skipping putting the mixture in the freezer for 10 mins. Every 10 mins makes a difference for me!
I decided to pop them in patty cases instead, so I didn’t have to wait to roll etc. Saves a lot of time and mess. I popped them straight into the freezer.
One of my boys is home with me today and has taste tested them already and has given them the big thumbs up! I think they taste pretty good too!
