Healthy Chocolate Coconut Bites

  • 1/2 cup coconut oil
  • 1/2 cup cacao or cocoa powder
  • 1/4 cup maple syrup or honey
  • 1 cup coconut flakes unsweetened
  • 1/4 cup quick rolled or quick cooking steel cut oats
  • 1/2 tsp pure vanilla powder or seeds
  1. In a medium pot, melt coconut oil on low heat.
  2. Remove from heat and whisk in cacao powder and vanilla. Whisk in maple syrup or honey.
  3. Add coconut flakes and oats; stir until well combined.
  4. Place mixture in a freezer for about 10 minutes.
  5. Line flat sheet or platter with parchment paper. Using small scoop, form and roll golf size chocolate coconut balls placing on a platter.
  6. Freeze for 30 minutes. Enjoy chilled straight from the freezer or fridge.

These were super quick to make. I made it quicker again by skipping putting the mixture in the freezer for 10 mins. Every 10 mins makes a difference for me!

I decided to pop them in patty cases instead, so I didn’t have to wait to roll etc. Saves a lot of time and mess. I popped them straight into the freezer.

One of my boys is home with me today and has taste tested them already and has given them the big thumbs up! I think they taste pretty good too!
