Homemade Lemon Icypoles

Homemade lemon icypoles

We make a lot of homemade lemon icypoles each summer, I love these with the berries thrown in!

  • 3/4 cup 185ml honey
  • 1 cup 250ml cold water
  • the finely grated zest of 2 lemons
  • 1 1/2 cups 375ml freshly squeezed lemon juice (from about 4 large lemons)
  • a handful of berries of your choice (fresh or frozen)
  1. Combine honey, water and lemon zest in a small saucepan and bring to the boil, stirring to dissolve the honey.

  2. Boil for 1 minute then remove from heat and set aside until cold.

  3. Strain syrup into a jug, squeezing as much flavour as you can from the zest before discarding it.

  4. Add lemon juice to the syrup. Place berries into 4-6 popsicle moulds, pour over cooled syrup, snap on the lids and freeze for 4 hours or overnight

If using wooden sticks freeze popsicle for around an hour until slightly frozen before inserting sticks.

If you want the berries to be at the top of the popsicle, place berries into the moulds, pour over 1-2 tablespoons of syrup and freeze until solid before topping up with the rest of the syrup and inserting sticks.

Run moulds under warm water to help release.
